The walnut skin, which in its biochemical composition contains an astringent substance - tannin . Even with minimal storage times at temperatures above the permissible limit, it causes a bitter taste. The walnut skin contains tannic substances that slow down the work of the liver and pancreas.
We removed this skin to improve the taste qualities of the nut.
The walnut kernel is peeled using an organic peeling method, which is the most gentle and safe for the quality of the walnut. In addition, after the peeling process, the walnut also acquires a number of beneficial properties.
The aim of this technological process is:
- give the nuts an exceptional appearance and taste;
- improve the microbiological purity of the product;
- inactivate oxidative enzymes, thus preventing enzymatic deterioration of the product and prolonging its shelf life.
This product is widely used in the confectionery and food industry for its softer and more pleasant taste.
Peeled walnuts are an ideal product both for pure consumption and for use in technological processes to obtain various types of products. It is an irreplaceable raw material for nut butters, nut milks, confectionery products and snacks.
